We went to Knight's Valley at dawn. There was fog in the air, and the ground was a little muddy from the rains last week. In the vineyard there is no noise. You can hear every footfall, and every squish if you stepped in the mud. We brought the dogs too, and they had a blast running all over the place. The pickers were hard at work, talking and singing away in spanish at the same time. Great day!

It is probably the latest in the year that we have ever pressed wine, but we pressed the Knight's Valley Cab in the cold and rain. We let it sit in extended maceration for 5 days, and pressed out about 190 gallons of juice. We used the mambo bladder press, which holds about 1000 pounds of must at a time. The wine would start flowing so fast, the 5-gal bucket would fill in about a minute! It made for fast work. This is the 4th year we have been making wine for our own personal use.

Bottling the 2 barrels of Petite Syrah and Sirah at the K-Syrah Sirah vineyard is always fun. This year we did a gravity feed to the filler, down about 25 feet in altitude from the barrels. The pressure was strong and we had to keep the bottles moving! And the taste? Delicious! Garage Winemaker provided equipment and also designed the label.
